Score we e'er told you we uprise from a Tongue parentage? We'll, we are! Specifically from Tolosa, warm San Sebastián. And fish is in our slaying - so we couldn't aid but greet you with: Marmitako! A yummy fish stew direct from Euskal Kostaldea.
Ingredients:
- 200 gr. - Fresh tuna, cubed
- 4 cups - Fish stock
- 2 cups - White wine
- 4 units - Potatoes, peeled and chopped
- 2 units - Onion, chopped
- 1 unit - Leek, clean and cubed
- 2 units - Garlic cloves, minced
- 4 tbsp. - Olive oil
- 2 tsp. - Paprika powder
- Parsley
- Salt and pepper
Directions:
- Lightly sautée the onion, garlic and leeks with olive oil for about 5 minutes.
- Add potatoes and white wine let cook for a few more minutes.
- Add broth and make sure the level is high enough to cover the vegetables. Add paprika powder, salt and pepper to taste.
- Cover and let cook slowly at low heat. Add more water if needed.
- When potatoes are ready, add cubes of tuna and cook for 2-3 minutes.
- Serve marmitako and sprinkle with fresh parsley.
